Well, my life of late is all about this question. It turns out you can do a lot. You can watch TV, listen to the radio, read email (and answer it V-E-R-Y slowly), play web sudoku, play web boggle (though that is thoroughly frustrating, trying to type words one-handed against a time clock), read a magazine or a book if you got yourself propped correctly before the meal started, eat your own meal (trying not to drop pizza/chicken cassorole/lo mein noodles/hot tea, etc. on top of baby), have a conversation with a lazy preschooler who won't get out of bed, talk on the phone, spend lots of money shopping online, and even, it turns out, write blog entries.
But today, I discovered a novel one-handed activity - using the webcam. I was able, during Abby's 2-3pm feed (did I mention she's a very slow and frequent eater?), to take a few new pix of her and me, find some older ones, and edit a few. It made for a surprisingly satisfying creative endeavor. Below are some of the results:
